CALCULATING THE COST OF TURNOVER AT 5-STAR HOTELS IN TURKEY BETWEEN 2000 AND 2016
Authors: Akın AksuA, Dilara Bahtiyar, İrem Deveci, Yavuz Koç
Abstract: The hospitality industry inherently involves high levels of staff-customer interactions and high turnover rates, which can potentially have a negative effect on the nature of those relationships,
increase costs, and lower revenues. This study collects data for seven hotel positions (housekeeper,
reservation chief, food & beverage manager, front office manager, accounting clerk, kitchen staff, and technical service manager) from nineteen 5-star hotels in Turkey from 2000 to 2016. The estimated costs in 2016 of turnover for a housekeeper was between 2,179 US$ and 5,475 US$, between 2,009 US$ and 7,221 US$ for a reservation chief, between 8,283 US$ and 29,996 US$ for a food & beverage manager, and between 11,555 US$ and 24,391 US$ for a front office manager. The paper also discusses the implications of these findings.

Authors: Maja Banjac, Bojana Kalenjuk, Dragan Tešanović, Snježana Gagić, Biljana Cvetković
Abstract: The food is basically a physiological need of people. However it has been increasingly enjoyed by gourmets thus satisfying their hedonistic needs and creating the basis for a tourist trip. For food to be the motive for the arrival of tourists, it must be different from the food offered in the
daily environment of living, and it is expected that such food exists in rural areas. Research of gastronomic potential in rural areas was carried out in the region of Vojvodina (northern Serbia), which is a multicultural tourist area where there are around thirty different nations, which through history, living in this plain, fertile area, influenced the formation of the rich and varied gastronomy. The aim of this papir is to examine the tourism potentials that could attract rich gastronomic tourists to rural areas, in order to support the development of countrysides of the region.

HISTORICAL REVIEW OF THE TOURISM DEVELOPMENT OF LAKE VELENCE
Authors: Wirth Gábor
Abstract: Nowadays the development and future of the well-known Hungarian bathing resort, Lake Velence, have been put to focus by professionals and the media since „Historia est magistra vitae”.
Even experts must learn from the mistakes and successes of the past. This study is trying to show the tourism development of Lake Velence by analyzing this settlement’s functions. Literature, statistics and research deal with this issue. These sources cover actual questions as for the tourism development of Lake Velence. Historical databases of Hungarian Central Statistical Office (KSH) and System of Settlement Data (TeIR) have been used as well as the sketchmap of Geomarket software, which gives a chronological contrast. The advantageous transport-geographical state and the nearness of Budapest influenced the tourism development of Lake Velence. The development of tourist attractions, primary and secondary suprastructure deepened the differences between the examined settlements. Improvements can be achieved only if a complex regional development is put through in the area of Lake Velence.

IMPEMENTATION OF SUSTAINABLE TOURISM IN PROTECTED AND SENSITIVE AREAS, A CASE STUDY OF THE BALKAN MOUNTAINS, SERBIA
Authors: Vaso Jegdić, Srđan Milošević, Iva Škrbić
Abstract: The development of tourism in protected areas is a particular challenge for the tourism business and nature conservation. The goal of this research is to discuss an approach, or potential model, that would improve the implementation of sustainable tourism in protected and sensitive natural areas. The paper analyses the case of the Balkan Mountains destination in Serbia. In addition to the case study, the authors used the following methods: observation, content analysis and comparative analysis. This study assumes that community-based ecotourism, as a form of alternative tourism, must embrace individual initiatives within the community as a model of sustainable tourism implementation. It is understood that individual local initiatives must be thoroughly reviewed by all stakeholders. Bearing in mind that the inclusive appreciation not only of nature, but also of indigenous cultures that prevail in natural areas is a part of the visitor experience, this empirical research is primarly focused on the local initiatives concerning the quality of visitor experience in the Balkan Mountains. Preference is given to responsible community-based ecotourism initiatives. This could result in many benefits for the local communities.
